My seedlings are on their second set of leaves and still having trouble standing up. I have something holding them up but what makes the stem thicker mostly? The roots expanding or it's leafs getting bigger? I'm just trying to figure out if my having them held up by a straw will eventually give them the strength to stand on their own...

What kind of light are you using? Seedlings require a minimum of 64-80 watts of daylight lighting, depending on the bulb.

You probably have your light too far away and/or not enough of it. The stem could be elongated to the point were it cannot stand up by itself, so either up the light or bring the seedling closer.
