What are examples of issues that would legitimately be labeled "States Rights"?

No, even private companies have to abide by the law. Abiding by the law does not mean someone controls your private business.
What does the word "private property" mean to you?

Does it mean you (the owner) control it or other people do too?

A law which relies on a contradiction is apropos given that it was mandated by the Federal Government which is in the business of denying individual rights.

do you really even own the property if the government, which you never consented to, tells you that you are not allowed to rape 10 year old children there?

Two distinct and separate things Poopy Pants.

A person can own property, while not owning the people they have held captive there.

You're slipping a little too, feeling okay?

Hopefully my state will stop talking and Secede already. The federal government was never meant to be more then An umpire. True authority lies with the state. A state can refuse to follow orders from the federalist. Every state has its own Constitution, many stronger than the US constitution. If things don't change with the federal government I see a second civil war in our lifetime.

I like the direction you are headed in, please consider taking your argument to the logical conclusion.

True authority lies with the free and peaceful individual, not a smaller master (a state) than the previous master (a federation of states).

Don't underestimate the power of an angry heavely armed mob. That's why the 2nd Amendment exist. How can a government fight against armed citizens numbering over a hundred million? And if a state sides with the armed citizens there's gonna be a war.

I don't think a paradigm shift happens by exchanging who controls the gun.

The most powerful thing is an idea whose time has come. (a near Victor Hugo quote)

Unfortunately, critical thinking is not encouraged by the state, and is in short supply, so, maybe what will happen is bloodshed, but that won't create a lasting change.

I think the founding fathers would mostly disagree with you. But the most powerful weapon is an idea. You can't kill an idea no matter how many people you enslave or murder.

That's my point, an idea shift is what causes a paradigm shift. Replacing one set of rulers with another is not a substantive change.

I think logic would agree with me and disagree with "the founding fathers". A government cannot protect your freedom if its existence is founded in involuntary inclusion within it. Have you ever read Lysander Spooners essay, "No Treason, Constitution of no Authority" ? He does a good job of explaining why what I said is accurate.

How else do you build a new house were there's an old one? You must first demolish it then clear the wreckage first. Then build the new house to yer liking.
