How tall did you have the chicken wire? Has it been dry in your area lately? Unfortunately you aren't always going to see animal tracks. A deer could easily lean over a fence that isn't very tall leaving just the stalks as your picture suggests. Being shorter, rabbits will usually start from the bottom and leave almost nothing. And 7, three foot tall plants is alot for a rabbit to take. Not calling you wrong just exploring different possibilities. A tall fence that's been buried a good bit is your best bet either way.
No it's rained a quite a bit, which is why I haven't been there in a few days, and there is tons and I mean tons of rabbits around, and the chicken wire is 4 feet, the plants are 2 feet from the sides and the ones in the middle are roughly 6 feet from the sides so for a deer to get the ones in the middle they would have to step in I would assume. I buried the fence and staked it down so hopefully that keeps them away.

if u use paprika and oregano the the rabbits will taste better than the rats
Ferret shit is the usual here in the UK...works a treat. Some (most?) zoos sell their lion/tiger shit etc for this very reason. Worth checking out simply for the coolness of the solution imo
a 4 foot fence is rather easy for a deer to jump over, and it's big enough to munch down that many plants
