Except there is no coercion, and "protection" is only one small aspect of government function.
A person is born into a society. Society requires order, which requires law. You can leave society, but if you stay you know the implications.
In our representative democracy, the majority party gets some power but there are many roadblocks, checks, and balances in the system. Freedom can be limited but only when the reason is substantial and consensus has been formed over time. Laws change as parties rise and fall. It's not perfect, it's a fuck ton better than whatever hellish anarchist libertarian disorder you are hell bent on.
