I would probably trim small amounts at a time, but...
I find it very beneficial to leave just about all fan leaves attached, and just pinch off the new growth shoots above the nodes. Just gently remove developing bud sites and leave the foliage for best results.
If there is too dense of a canopy, and it literally looks like a bush that you can't see through, that would be a different story.
I hate leaving small budsites, so I'd trim it... but there is the distinct chance that it could be a bit too stressful and potentially cause complications.
Imo you're the only one who can tell how healthy and fast your plants are growing. Just remember to be objective. If you would tell a buddy not to risk it on their plants, maybe you should listen to your intuition. You develop a real feel for it after a bit.
