I agree with Gb ......the gauge isn't an absolute. You get a feel for it as he said.Ok, at least i know im not the only one. The guage came with the press so no extra dough spent there. I like having it, and i do kinda the same as you farmer j and do about a ton to warm up then increase a ton or so every so often as well.
Just trying to see if i can keep it from seeping out. Still though, isthereone nylon washer in there or 2?
And yes there is a thing as TOO much pressure. His explanation is right on.
