I haven't tried on pizza but the sauce is great as a spread on bread so I think you have a good sense of what to try it on. So, yeah, great suggestion. Maybe cook the pizza topped with grilled veggies and drizzle anchoiade over the cooked pizza and toppings. I'm baking bread in a couple of days and might try that over a flat bread made with some extra bread dough.

The recipe for the anchoiade came from Tartine Bread by Chad Robertson, BTW.

Bread made using his no-knead technique is amazing.

I’m coeliac but I always refuse bread on the grounds that it’s a lifestyle choice. I love the food Nazis opinion regarding those “who don’t have a medical reason to be (non white), I mean gluten free, irony bypass for food fascists.

Sourdough is the way to go...built my own starter for 99 cents at local grocery ...store in frig and feed water and flour
BTW the best bread method is the dutch oven first 20 minutes covered at 500f
uncover and brown to desired color

been to san fran a few times and just not a fan of sourdough for some reason.

i think growing up on the east coast i got exposed to ryes, pumpernickels etc which i still really love to this day. give me 2 slices of rye, some onion slices, mustard and liverwurst. now that's a sandwich!

Yah, bread isn't going to do you any good. I have plenty of friends who are gluten free whether they are actually gluten intolerant or not. There are plenty of alternatives. I consider it an opportunity to explore a wider range of menus when people say they don't eat this or that. I haven't been impressed with gluten free bread and so have never even tried to make it. .

Do you cook much? I have a sister in law and niece who prefer gluten free and I usually cook Tamil-Nadu and Kerala dishes for them when we get together for a family meal.

I'm always happy to cook for friends. I especially like cooking in their kitchens so the clean up isn't my problem. Beer on tap makes the whole thing even better.

Chad Robertson's first book -- Tartine Bread -- includes rye bread. I think Pumpernickel is in other books by him. I first checked out his books from the library before deciding to buy his first book. His technique is different from most other bread and baking books. It's like sourdough but his bread isn't sour. It took me a while to get the hang of making bread in his style.

Anchoiade

2 cloves garlic, chopped
6 whole canned anchovy fillets
1/2 cup walnuts
1/2 teaspoon ground coriander
zest and juice from 1 lemon
1/2 cup olive oil
1 tablespoon fresh marjoram
1 teaspoon fresh thyme
2 slices good quality bread.

cut off crust from bread and tear into pieces
peel and roughly chop garlic
place walnuts into food processor and grind until fine and clumping together.
place bread, anchovy, garlic, lemon zest and juice, ground coriander, marjoram, thyme into processor with nuts and process until smooth
Drizzle olive oil into food processor while running and process to desired texture.

Use as a sauce. Drizzle over fresh vegetables, use as a spread over bread or with fish or meats.

That's a really good book. I never noticed that recipe. I just happen to have a really nice can of anchovies.

I cook most days, I live in an environmentally protected area with organic farmland so the local produce is excellent. I have traveled in Kerala and Tamil Nadu and its some of my favourite food but I also like classic French and modern British food. The whole standard of restaurant/pub cooking in this country has gone from bad to very good in a generation thanks to the influence of French Chefs in the 1970s imo
