You said you are storing the cannabis in jars...
I assume these have lids?
Depending on the type of jar, this can have a major effect.
I used to store mine in closed mason jars and it wasn't until I began storing it in the open air that the oxidation really took effect. Even storing the cannabis in an open mason jar with a cloth top to keep dust away will have little effects because of low air circulation.
I began using shallow pans with muslin over the top (cheese cloth has a weave that's too open), but now I use fine mesh strainers with muslin on top. This allows the air to circulate but no dust to settle on the flowers.
With a window open and a cross breeze or a fan, the air flow seems to be adequate to oxidize pretty quickly.
As far as terpenes, storing cannabis in the open air leaves no terpenes so it can be quite harsh if you smoke the flowers.
Again, I haven't had the end product tested, I am just going off of how the "freshly" dried vs open air oxidized oils make me feel and I prefer the open air oxidized oil.
I completely agree with you about the amber thing... I have done purposeful early harvests and purposeful late harvests and unless the flowers are left on the plant for several months, there doesn't seem to be a noticeable difference, but then again my plants are CBD dominant 20:1 and 1:1 CBD:THC, so there isn't as much THC to begin with.
