They maintain moisture depending on the ones you buy. You can get them in 49%, 60%, and a few other options if I'm not mistaken. They sell them in different RH% for other things, like cigars or spices and what have you.@kratos015

I was actually mistaken and said the incorrect RH, you want 55%-60%. This guide is all you need for curing.

Drying is going to be more dependent on your environment. If you live in an extremely dry (under 15% RH) then you'll actually want to leave most of the leaves on when you're drying because it will help slow things down just a tad. A humidifier is also a good investment.
Somewhere more humid you'll want to remove as much of the leaves as you can. The amount of leaves you leave on, or remove, will be depending on your environment's RH. Nice thing about grow tents is when you harvest your plants you can just dry straight in there, roomy enough, and should have good temp/humidity control in place already. Or you can even build a room out of rigid insulation boards and duct tape, as long as the temps and humidity is spot on.
