I've been going crazy trying to figure this out. Its October. And temps are hitting below 50⁰......

So if I planted in may/June then they would start flowering in October.. well by the end of October its already hitting below 60⁰.... so before the plant is halfway through flowering wouldnt they die because of the temps?

Flowering can start under 14/10. You'd likely start seeing flowering in September. Your still going to be dealing with cold weather, but that gives you a few more weeks flowering time.

But your average first frost is late October, so you still run into the issue of the cold. I've heard of people covering their plants to help keep the frost off, not sure how effective it is as a long term fix though

I've harvested plenty of weed that has endured 27-28 F. Seems fine to me. You can surely go with 70 day photos. But just grow autos. Any photos I now grow I start in June. I don't need or want trees.
In Missouri I imagine you could have a mold problem. You should address that issue.
