I’ve modded it: I omit the onions, and (for six eggs) I add
1 strip bacon, cooked not too crispy, then minced superfine
1 generous teaspoon Tapatío sauce
I use a ziplock bag with a corner cut off as a pastry bag to fill the whites.
Two protips:
I stir the eggs in a gallon or so of cold water. A vigorous minute of this, followed immediately by boiling them in the Instant Pot (4 minutes pressure cook high, 4 minutes natural release, then depressurize, and 4 minutes in cold water.
The silicone spatula is the perfect tool for transferring all the filling to the bag, and also for squeegeeing the mix with almost zero waste to the bag’s operational end.
