what’s the difference in the kis organics and the roots or any other living soil
That's a good question. I honestly don't know. Even if I analysed the ingredients in each I couldn't say which is best. But I know kis organics is used successfully in commercial grows and the dude who runs it is solid guy who I trust.
I just don't know much about other soils so I can't recommend them.

So now I’m in between 2 spiderfarmer sf1000 or the HLG QB288 V2 Rspec & Slate 2 Triple. Which is best for the tent to get as much coverage as possible? If anyone knows which is going to have better PAR and bud development

The HLG lights are the Top Dog. You'd probably need to dim it a good bit though. It has an MW HLG 320H driver which can run at around 350 watts on max.
You have a tent of 20" x 36" so for simplicity sake lets say 2ft x 3ft. That's 6 square feet. So you need 30 - 40 watts per square ft.
6 x 30 watts = 180 watts and 6 x 40 watts = 240 watts.
A MW HLG 185H driver would be a better fit for your area.
Also, check the internal dimensions of your tent as the triple heatsink might be a tight squeeze as the fixture is 35" long.
Contact HLG for more nfo. They are very helpful.

So I checked out the kis brand it’s it’s really high in price due to shipping. In need of another organic water only soil.
