There’s nothing wrong with FF. You can just get good soil for cheaper and no there’s nothing wrong with doing what you are planning to.

There's nothing wrong with Fox Farms soils.

I started with FFOF 3 years ago and have since turned it into no-till.

Haha. I hear a lot of people bashing on FF but their soil is a great place to start as you say and even build off to nice organic soils as you say. I wonder if they have ever even used it when they type suck things lol.
