there is a little place down in Co Springs that has the Vienna Beef dogs. she makes a mean chicago dog. she has to buy all the stuff from Vienna beef: the seeded rolls, the weird green relish, etc. as part of her "contract"Gotta have the sport peppers.

Yet the day after Thanksgiving they have plenty on sale.There is always a turkey shortage around Thanksgiving.

There's a few places that make their own dogs close by to me. A place called Gartner's is pure heaven to walk into. They make several varieties of weiners including a beef. They have dozens more sausages as well. They make real bologna not that stuff they sell in the grocery store. They have head cheese as well. Then there's Otto's they have a bunch of sausage but Gartner's is my goto. They even have pig ears for the dogs which can smell the meat when we get back. The Chihuahuas won't settle down until I give them a piece of ear.

One guy that I worked with worked as a mechanic at a hog processing plant on the weekends. He said some of the budget brand bacon was the same stuff as the higher brands but sometimes the bacon gets twisted or mismanaged when packaging and the stuff is easier to just put off on the reject line rather than have someone try and fix them so they look right. I bought a few packs of cheap bacon after he told us that. You just have to look through them and find the good ones. But otherwise he said the cheaper cuts would get injected with water to get the weight up.our walmart used to have wright's bacon pack of ends and pieces that i loved. some would be pure meat and then others would be nothing but fat. haven't seen it there in months.
