Dinner tonight.

You might be surprised to learn I lived for a few years in Guyana as a little boy. I actually never lived in the states until I was 17 although I was born here. One of my strongest food memories is eating shrimp or fish curry and rice out of a banana leaf plate garnished with raisins, nuts, sliced banana and fresh shredded coconut. The cuisine there is a wild mix of African, Indian, Dutch, English and indigenous traditions. When I lived there there were 64 miles of paved road in the entire country. I've always wanted to revisit.

One trick for keeping cucumbers fresh is wrapping them in plastic wrap. Storing them this way will help to slow down their ripening. According to Cook’s Illustrated, wrapped cucumbers lasted longer than cucumbers stored loose or in a Ziploc bag: "The plastic wrap formed an airtight second skin, keeping moisture from leaving the fruit and nearly preventing moisture loss from occurring."

Now it really tastes like tandoori tikka… just a $3 disposable coal grill.

Bumped up the chilli, cayenne and hot paprika powder and added a teaspoon sambal. Just hot enough, no throat burner but enough to make you feel the heat on exhaling. Cucumber+mint raita to cool it down.

There are 6x more chicken than humans in the Netherlands so it’s time to step it up. Added some wings on what was left of the smoldering coals, took a very long time to finish, but while not as good as the tandoori, this smell draws in customers… real classic butchers used to have a rotary with grilled chicken outdoor, just 5 bucks for a whole chicken. Last time I had one of those was in Australia… that’s how rare it is here now.

Generic chicken spices + extra koriander and some sweet soja.

Cucumbers come wrapped so they can be eaten after use...
