This plant is around 12+ weeks into flowering and 16+ weeks from seed
Is it almost ready?
Most side buds have cloudy trichomes

its got all cloudy trichomes and many are now turning amber. I'm worried I might miss the window. Read that some strains keep having white pistils and we need to go by trichomes.. Also many buds seem to be having "foxtails", including main cola

Foxtails will keep putting out white pistils until the light intensity is dropped. You still have a lot of white pistils, other than the ones on the foxtails. Those are the ones you need to concentrate on. Never heard of a strain that puts out white pistils, once it's ripe. You got any documentation on it?

Yeah it's the picked 2-3 weeks early document.

Looks like I've got some nanners on one lower branch.. should I cut them off? or let it be and get some seeds? I guess still not ready for harvest (85 days of flowering, bagseed)
It's not going to yield productive seeds if it's pollinated this late. I'd either pluck them to avoid the immature seeds or just go with it and deal with a couple immature seeds in your lowers.

I see a little amber in there. She's almost there. Personally I like to see 5-20% amber trichomes before harvesting. It depends how locked you want to be to the couch. More amber, more couch lock.
