After I ate that pickle and peanut butter I thought about mustard. Next time it will be pickle and peanut butter dipped in mustard. Now I need to decide what kind. Stone ground or dijon.

Used my new deep fryer last night for the first time. Worked well. The secondhand one we had wouldn't get up to the right temperature. The new one as a basket and removable oil tray. Debating on whether to just store the whole thing with the oil in it in the fridge or put the oil in jars. I contemplated an air fryer however I read doing battered foods, unless previously cooked, was a no go.

I run it through a coffee filter a few times then put it in mason jars.

i do the filters too and then in a big container in the fridge. i try to get 4 fries out of it before it gets a bit funky

I've been frying in a carbon steel wok for a few years now. It works great. One of those 48 oz bottles of oil is just the right amount. After I'm done frying and the oil has cooled I use a fine mesh strainer and funnel to pour it back in the original container and then back in the refrigerator. Next time I fry I just top it off with fresh oil, dump it all in the wok and start frying. When it gets too dark I start with a fresh bottle. I have a friend that I give my used oil to and he repurposes it.

With the removable liner I could just put it in the fridge and put the lid over it or seal it with press and seal or saran wrap. I'll figure it out. It's in a space the old one was in so I'm not hurting for room in there. Would have been nice if they included a lid to seal up just the liner. My only complaint is the cord is too short.

You want to make sure it's sealed airtight so it doesn't go rancid. Apparently keeping it in the freezer is the best place to store it which I think I'll start doing.
