Lots of the kitchens won't accept it as you have to treat it like pork. I've had bear tenderloins cooked in cubes like marshmellows, and hambeargers.Oddly enough I really want a hamburger now. Or should I say Hambearger!!!! Hahahahaha. Greasy is definitely the defining taste, searing fire and pepper is probably the best way for me to cook it.
Properly killed and cooked,bear is delicious. Burger is like beef, but more subtle and wild.The roasts have to be boiled or pressure cooked with a water change and produce a tender beef consistency but sweeter and less bland.With bear,they are more individuals and some are strong, but most are really good here.Yeah, I just like to try anything once.
