I been fucking with the quesabirria tacos lately.

Take a tortilla, dip it in the birria consume (cooking liquid), then throw it on the grill to get crispy, melt cheese on it, and put a generous helping of birria on top. Grill till the tortilla starts to get crispy, and serve with a side of the consume to dip them in.

For some reason when it comes to taco meat, or any meat in Mexican food, I tend to prefer the stewed meats over the grilled meats.

I’m a big fan of slow cooked meat in general, any way it’s prepared.
