several ways to do it you could cut or pinch out the growing top, you could squeese and roll aroung the stem til it softens and the top falls over or you could start tying it down, i wouldnt say prune that sounds to much like taking off useful fan leaves
Best to leave the fan/sun leaves on the plant. They are the big ones those are needed so the plant can process light, co2, oxygen and transpire.
