What you're smelling is the chlorophyll dissipating, thus the cut grass, or hay-type smell during cure. I was worried about my last harvest for a while also, but had one special plant that was curing seperately from the rest that had a sort of bad smell.I let it go for about 40 days and the smell is gone, the taste and flavor are superb, the smoke is smooth and clean, and the buzz is right where I wanted it to be. Give it time, patience is as important during the curing process as it is during the actual growing. Just be sure to burp your jars as needed and it should be fine.
