Yeah, I s'pose you have a point, I'm lucky, in that my tapwater is always 6.8, my soil's always 6.8-7.0, and after mixing my fert mix enough times, i don't even really have to measure anything, to keep my PH close to the 6.8 range. But, if I'd just started growing, and never checked a thing, and happened to have a bad batch of acidic soil, or really fucked up tapwater/fert mixture, my plants would've never finished. And, if there was somebody telling me to not even worry about PH, I would've given up growing, because i'd have never figured out the problem. But, then you go and say something like "just add worm castings, lime, etc...." to keep your PH in check, is retarded. What you just said, is "PH IS IMPORTANT, but I've been doing this long enough to know that mine will stay in an acceptable range, and don't give a shit about it anymore". Don't tell that to a new guy, that doesn't know what he's doing yet. Not everybody is lucky enough to get away with not checking anything, not right from the start.
