Make sure you dry that meat.ách'ee - sheep intestines wrapped around a stick coated in fat. It tastes better than it sounds... and looks.

Why pickle them? Just boil them with one or two inches of stem for about 30-45 minutes. Run cold water on them till you can handle them. Skin will come right off and then slice a 1/4" thick. Serve 'em up with a dollop of sour cream. Yummy.Pickled beets. I can never get enough. We have jars of pickled beets in our storage room. I may have to raid the pantry.
