Lesson learned, reassess the condition of one's equipment before jumping to conclusions, lol. I still am glad to be filtering the extra calcium, and will continue to do that as best I can. Glad I'm not ph downing or anything, and that you guys convinced me not to mess with ph in the first place.
So, it turned out that my ph meter was pretty dirty... I had not noticed, but there was some mildew forming inside the cap and up inside the walls of the testing area. I took my electric toothbrush and dedicated a head to cleaning this thing... a bit of hydrogen peroxide and a scrub and my water reads like 6.8.
