That's your central problem right there. A grow space needs to interact with the space around it, either via elaborate ducting and blowers, or through exposure. If the room the tote was in was low humidity, and you had sufficient circulation, you wouldn't be seeing what you're seeing.

I think they need more than a week. They just don't have any of that really ripe look to me. I'd say 2 more weeks which is 9 full weeks. If I were you I'd keep it simple and do a flush a few days before chopping. I doubt that the extra dark either helps or hurts.
