I Think 150 gallons will suit you very well. Your not going to fill the 5 gals all the way with water because of the medium and plant material. If you did, you would need 120 gallons and they would most likely drink 5-10 at the most so you would never touch 150 gallons total.

Put it in a parer bag in a cabinet. I would find another way then the fridge. Too cool and too dry.

If your not running a perpetual garden then dry in the same place you grew in. No light, hides smell, dry, secret, and with just an exhaust on, it can exchange air without drying out the buds too fast.
