My bad, I definitely wrote that wrong. Everything will be hung up to dry before going into the jars. I would like to cure for 6-8 weeks but normally have to travel every 3-5 weeks and can't normally be around to burp my jars.

Obviously it would be dried and trimmed before going into the jars. This is for the curing, not drying.
