I've tried one (maybe two) without glaze and they are near perfect. The nitpicks I have lie with the lemons I used to make the candied rinds. The lemons I get these days are very 50/50. Sometimes they are lovely and sometimes they are horribly bitter and sour with a strange brownness in the middle.

My aunt Dagmar and her sister Eva would go to the Christkindmarkt and mail lebkuchen to my brother and I when we were children. We stopped being children so the cookies stopped. I'm never going to be wealthy enough to fuck off to Germany every Christmas just for cookies, so I went recipe hunting...

    How are things looking?

Lmao no. In fact I gave up at the 4th pound. I was just tired of weed being everywhere lol... the dog, my clothes, the floor. I put it in a pound size grove bag and fluff it every once in a while. The 3lbs I did trim took 2 weekends and 8 people to do.

My want for Nuremberger lebkuchen outweighs the tedium of their creation, so I embark to make cookies. Step one is candying lemon peels. I dropped half a vanilla bean in there this time, I don't usually do that.

Chickens eat everything, not just weeds and bugs. Sure wish they'd eat creeping Charlie. They prefer cloverleaf and ignore dandelions. They absolutely will eat the cannabis, too. I was pretty careful about watching what they did around my plants. Once they were tall enough it wasn't an issue...

    What did you accomplish today?

I wish my husband could build me things. Busy this weekend. Busy today. I am doing a lot of teaching lately. This is a design I did for a project coin for my two apprentices. The coin is about nickel size and made of 416 stainless. One side is acanthus scrolls in my own personal hatched style...

I've determined that the white stalk of baby bok choy makes a very acceptable substitute for celery ribs in hot smoked salmon salad. So yummy. I minced half a green apple in there with a bit of red onion, half a squeezed lemon, salt, pepper mayo and a dash of vanilla sugar served over a toasted...

Deets on the smoking? How was it? Might be the only way I'd ever cook a whole turkey if I was gonna do it again someday. (I just don't care for whole turkey, I've never had a whole cooked bird that wasn't disappointing, parted up turkey can be great though)

It's stuffing, I just baked it in the bundt pan instead of in the bird. I don't like putting stuff to eat in the bird cavity, I rather like putting things that will steam moisture and aromatic oils into the meat instead. Simmer celery, red onion and cranberries in butter, add chicken stock sage...

I'm so tired, but the meal was good. Dinner for two. 7lb Pekin duck: stuffed with rosemary, thyme, sweet onion, lemon, blood orange, garlic, s&p, seasoned outside with Himalayan pink salt and fresh cracked pepper and rubbed down with lemon and blood orange, roasted with a balsamic vinegar lemon...
