I am an Optic LED guy myself....but lots of great lights out on the market.....whatever company you choose as long as they use quality components....LED's and drivers you will be fine....kinda just depends on your budget....if money is not a problem,,,Chilled Tech makes some awesome lights that...

I run 650 watts over a 4x4.... mine are bar style lights.. so the spread is more even than a COB... but sure you can... if you need to and your height allows you can move them up.. I do see your a bit vertically challenged at 6 feet... up to a point .. more light equals bigger denser buds father...

I’ve got the 650’s... they are advertising the 720 for a 5x5... my trays are 4x4.. so I don’t see the need... also when you start pushing the wattages up on these LED’s.. I think you start to loose some of benefits that make them attractive to buy... which for me was less electricity and heat...

I’m not saying my grow is “better” than @bk78... it is bigger... but honestly the guy has been nothing but complementary to me... just my experience with the guy... could be yours was different. Optic LED gets my vote!!!
