@Derick Crane unless that was an heirloom pepper you may be better off buying vegetable seeds to plant. Most store bought vegetables are hybrids and do not breed true. Best of luck tho

I second that. You want to exhaust the heat. Only put an intake fan if you don't care about smell. If you're not running a filter than I'd still suggest a larger exhaust fan before spending on a intake. Well unless you live in a permanently cold environment and are venting in outside air

Do you have hygrometers in your jars? What's the humidity at when you first jar them? From what I've read if your jarred humidity is under 55% the curing process stops. I prefer to trim early and if it's still a bit too damp leave the jar open. Maybe try cutting a day or two off that solid week...
