When I was harvesting and manicuring my bud my dog kept begging me for some so I gave him some leaves and he ate them and I gave him a little bud and he loves that too.

you are definately stretching the SHIT out of these plants and you need to move the lights closer to the younglings. you should probably bury the plant up the the first set of leaves as well.

Any other thoughts? Is this nuteburn?

I'm using General Hydroponics Flora Series. I had the 1000w pretty close - within 12 inches, however I have the lens enclosure for the reflector and a dayton fan with ductwork attached cooling it so I'm able to get my hand VERY close to the bulb witout it being hot (within 3 inches).

So I started my first grow and it didn't seem like I was getting results with flouros and young sprouts so I put them under my 1000w MH. I'm able to maintain a good temperature however the humidity is at about 30%. My question is - does this effect the plants in an adverse way? In the pics...

I'm all for the wet paper towel method. If you can add some bottom heat I've found that helps out ALOT as well (anything will work - seedmat, router, monitor, etc.) Just remember to keep it dark and moist.
