Is it better to use the entire 5x10 as canopy space and have to move plants in and out with bamboo poles or cages. Or to plan for a walkway and trellis a smaller canopy space?

you're going to want a little walking room to attend to plants and fix any issues. use at least a foot to be able to get in there
