6 plant count (3 in flower)?

I would do two each in different stages. Depending on you veg time you’ll be able to harvest every month or 6 weeks.

2 in last month
2 starting flower
2 in veg.

You’d probably need to go over your plant count with cuts but just a few. In Colorado you’d just have to cut them down at worst.
 
You already know how I set mine up. 6 plants, about 10kW, pull 25+ # if you have a strain that plays well.
 
How long do you think vegging a 5x5 with one plant would take me from seed? I'm just curious on the time range I'd be looking at.

Thinking I might use like a 30-50 gallon container for my final pot and just go for it.

Maybe 2 months or a little more? I veg mine about 45 - 50 days from clone. So at least 2 months from seed, maybe 2.5? A lot depends on strain obviously, with MAC1 it would be more like 3 or 3.5 months lol and GMO probably just a month and a half because she stretches for 30 days after flip.
 
Here in CO, if you have someone else over 21 in the house you can double that. But only up to 12 total, and only 6 can be in flower.
 
The big deal with Colorado is that unless they are at your crib for some other situation like a domestic dispute or a fire then they don't know and don't care. Back in Missouri if the power company saw you growing they were all excited to report you and collect a reward. In Colorado they just want your money, they wanted to upgrade my service to 400 amps lol
