Check out Newton Faulkner, he is insane with an acoustic guitar. And his voice compliments the tone as well.
Zakk Wylde has some really good acoustic songs as well. Try the Book of Shadows album...some songs that stick out "Throwin' it all away, Sold my Soul" pretty much every song on that album.
