the most simple way i can put it is the slower it dries , the better the smoke.
i cant explain the exact process it goes through during this time because i never cared enough to research it. all i know is the pot changes biologically while drying. and the longer it takes the better the cure. probably somethin to do with cbn's, cbna's, thc and all the other shit thats in there.
i like some species better when its not cured and just dried. its a taste thing for me. the bagseed i got now is way better after a good cure.
i jar mine up soon as its dry enough to smoke good in a paper. then after sitting overnight it will get moist to the touch again. then i just burp it until it has that beautiful texture (nice an hard with a tiny bit of sponge left)

Yeah, without googling, I believe there is some chemical conversions going on that affect the character of the high, then the chlorophyl is aging too, which should smooth the flavor out. Even tobacco gets cured before they roll it into a cigar, and the aging process has a huge bearing on how it tastes. I have never really known for sure if it increases potency or not.
