Almost chop chop time (Trichome pic)

The trichomes are not the best way to judge maturity in cannabis, and if you do decide to use them as a guide take a picture with a white light so the trichome heads color could be evaluated.

By the looking of the buds they look ready to chop. A full plant picture will give a better evaluation.

This is the closest thing I have of the full plants right now since they are sleeping but I did chop a few that started to turn amber in the trichomes here is one of the buds after they started curing in the jars

The bud looks mature, but the wall of buds picture is way out of focus to decide maturity.

That was the bud from the bud of wall lol I'll take more once they wake up. Just finished trimming the leaves after leaving them for 5 days hang drying now they are on the drying racks just can't decide if I just wanna chop them all

Not correct at all.
Should take 3-7 days to dry. More than that and you risk mold.
Then you want to cure for 2+ weeks. You can still get a good idea about the smoke before curing.

My stats are
Drying : RH 50%, temp 26°C
Curing (in the jars): RH 65%, temp 28°C
Smoking and storage: RH 30-40%, temp 4°C. For longtime storage temp -18°C.

Curing woops my mistake. Well it smells and taste like candy just now from the stuff that has been curing for 2 weeks in the pic

Might be. Smells and tastes develop while curing as they chemically degrade. Moreover, the chlorophyll and some other compounds break up which should remove the hay like smell of freshly dried weed.
As for the rest of the harvest, proper (white light, stable camera, no flash, full plant and close up on a few buds) pictures is your best option.
