Am I overwatering?

Looks pretty good. Is the soil soft? A day or 2 it should take off. What soil you transplanting to?
Its pro-mix coco and I added perlite. I took a vacuum to the roots (which sounds bad but i was gentle) and pulled as many of them bugs off before going into a 3gallon plastic pot

If you are growing in Coco you don't need any dry back. I have no idea what pro-mix is but if it standard Coco then water it as much as you like. The more you water the faster they will grow.

I’ve tried that and they’ve always been overwatered

I always use fabric pots and my Coco gets watered from 3 - 10 times per day depending on the growth stage. Could be the plastic pots that's restricting the air that should be in your Coco.

Is it pure Coco or mixed with something else?
I’ve used fabric and plastic with the same outcome sadly. The coco is mixed with perlite

I had a look at that pro-mix. Is it mixed with peat moss? That could be the reason for your troubles. Peat moss will retain a lot more water than pure coco coir.

Try canna coco coir and you might have better luck. Once a plant is out of the seedling stage overwatering should never really be an issue in a coco/perlite mix.

Nice catch on the peat base “coco”, and would explain the severe overwatered look.

Would something like this work? I can get ahold of some perlite for free and spend 4x less than the premixed stuff.
