plants haven’t been growing lately nor the buds. It’s been 7 weeks plus into bloom.

What strain is that?
7 weeks sounds a bit early to me. I'd be giving it another week at least.

Looks like you cut out the fertilizer too early. You could give them a mild feeding and let them keep going.

Honestly the maturity looks better then most of these "are they done" threads

so cheers! It's possible some of the fast maturity came from the plant being hungry but that is irrelevant right now. If you aren't seeing any mold or issues with the buds, then personally I would wait about 5-7 days. You might be surprised that the buds will still swell more internally as they ripen. I've had strong branches that managed to bend over from weight during the last 2 weeks.
