The ones I see on the Chinese buffet don't look like that. But it's hard to judge legs when they have been battered and fried.Bullfrog I believe, the round things on their heads are their eardrums (tympanum).
Remember to cut the tendons before frying or they will try to escape.I used to gig frogs with an old Illinois boy & he knew the "big frog" spots (golf courses and private farm ponds). All the Bulls we took were dark/bland green/brown with no yellow or spots and they were huge.

I used to save the feet off the pheasants I shot and cut back the skin to where the tendons were accessible. You could make it grab someone's finger or flip them off. Simple things...Oh c'mon that's the fun part when you have kids!
