you want to use lalvin ec-1118 also known as champagne yeast. its tolerance level is 18% alcohol. you might want to add a teaspoon of yeast nutrient per gallon and 2.50 lbs of sugar. that should get your alcohol up around 16%. that way you can add part of that mixture to the next mixture because your yeast are still alive and has greatly multiplied from the time you pitched the yeast in the 1st batch. if you don't want that hassle throw in 3lbs of sugar per gallon and let it roll and start over by pitching another packet of yeast. one thing is for sure with champagne yeast you won't have to switch out nearly as many times. midwest homebrew supplies have the yeast at .80 per pack and 1.25 for the yeast nutrient. they also sell grow supplies under midwest hydroponics.

one clarification. you need to have one gallon of water per the 2.5 lbs of sugar. so you would need more than a one gallon container. so adjust accordingly if you only have a one gallon container. you might try a 3 gallon carboy a bung and an airlock. if you are worried about stinking up the place. get some campden tablets and throw in at 1 tablet per gallon. this will kill the unwanted bacteria in the must and will also kill the yeast. you need to let it sit 24 hours uncovered for the campden tablet to dissipate and then pitch the yeast. mix it up the yeast in a sterile cup of water and pour it in the must. and then bung it with the airlock that will have water in it. the co2 escapes but no air can get in the carboy. cleanliness is important. as far as i am concerned, if you don't take it to the level that i describe you are completely wasting your time. i myself just go with good air circulation and have great results. right now my flower room is at 488 ppm and i am experimenting with the 3 gallon carboy adding co2 but i also am introducing fresh air as well. just try different things and see how it works. i have had some of my best crops without co2. if you can have great air circulation you will be fine without co2. I have had rock solid nugs without it. If you don't do the co2 right and try to keep things airtight you risk a catastrophe. if you don't have a co2 monitor you have no idea what co2 level you have going on. so if you don't got the equipment i would just use the fans.
