I've heard about outdoor growers growing in buckets due to rocky or just plain shitty soil. Is this reliable? And how big of a bucket or pot should be used for each plant?

Get some 5 gallon buckets and fill them with your own nutrient soil. Just make sure you put holes in the bottom of the buckets

If you are planning to let them grow an entire season, 5 gallon buckets should be sufficient. Sativas typically like their roots to grow a little deeper but only when they are growing 10+ feet i'd say. But yeah, buckets with a couple drainage holes should do it. You can find loads of different soil types on the internet or gardening and plant stores. Youre gonna wanna get familiar with N-P-K values and the differences between standard and organic soils.
