if i was going to have a grow in my closet for 1 plant could i stop the growth at about 1 foot

id grow more then 1 in a closet, you could always grow them 2 feet and lst them along the way bigger better more buds!!

Yes, just keep topping it and consider training it
by bending the shootes with a trellis, or weighing
them down some how.

the reason i am trying to grow just one and small because i dont want my parents finding it haha

im planing on making a little grow box to hid in my closet
