dr earth makes great products. coir is fine to use in a mix. make sure you have some compost like earth worm castings or a biodynamic blend like malibu compost in the mix... and drainage material. don't get caught up in the nutrient brands... they're all basically made of the same stuff... just different formulas of organic inputs.
What did you ph your water too?
A true organic grow would suffer if you pH'ed the water everytime, not needed with this style of grow.
Nope that would be me , been doing it now for a couple years . Took a lot of getting used to but it is by far the easiest way to grow. Once u are used to itI've yet to see a successful grow on any forum using Mr. Canuck's method.....everybody seems to have problems and most pack it in and start feeding with a nute solution from the top.

Are you amending the coco with castings (or anything else really) in addition to the Dr. Earth from the get go? Any teas, etc later on?
