This is called super-cropping, lots of growers use this technique with great success. It's best to bend/snap the branches after the plant starts flowering not during veg. During the vegitative stage the branches are very soft and limber almost rubbery, most of the time they will bounce back into place if you bend them. In flower they will get very stiff and ridgid to support the buds. If done correctly the snapped stalk will begin to form an elbow and reroute the water and nutrient uptake throughout the branch.
