Taste can get iffy at all stages of the process. First makes sure all your water leaves (fan leaves) are trimmed off completely before you start drying. When you hang your plants to dry be sure they are in a dark, cool, dry place. You want the buds to dry out slowly and naturally but fast enough where mold doesnt develop. Nothing is worse than trimming up the prize cola of your harvest and cutting into white powdery mold. While they are drying check them at least daily to see how they are coming along. When you can take a branch you have hanging and can break it cleanly you know the buds will be dry in the center as well as the exterior. take those branches and trim them up. Here is a vital part of keeping wanted flavor and getting rid of that grassy taste/ smell. Trim off all the sugar leaf! You should see only calyx's (buds) also means no shake at the bottom of your jar. the less leaf and stem their is in the curing process the better the flavor will be. So now all your buds are clean shaven and ready for curing. Take your clean mason jars and jar em up. Make sure their is enough room for air to travel throughh the buds (airflow is key). You should be able to turn the jar and the buds move freely. Store them in a dark cool place and take them out twice a day to burp the jars and turn the buds so all the surfaces get air commonly. I like to cure for a month but every grower, smoker, strain, etc. has their own opinion on this. When you feel they are ready (meaning aroma and flavor are peaked) take a nug hold it to the sky and load it up. Any other questions let me know.
