drying and cureing in the cold winter

whats your thoughts on drying in a cold room say 45 to 55 degrees, in the past i have left some buds on the floor of the drying room for months with no heater or fans and they dont get crispy and seem to be better then the jarred stuff
Also when doing the dry trim method is it important to trim of the leafs before jarring or getting the moister even, how about leaving stems on vs buds only when going in the jars

I've hung plants to dry in a cold room before (about 60f) with a low humidity of 15-25% and they took about 10 days to dry enough to jar. I also left all the leaves on to slow the drying process. I noticed a big difference when letting the buds dry slower and longer, the buds tasted and smelled better, and the high seemed better as well.

this is my first time drying with the leafs on and the colas intact, i tryed to pry the buds away away from the stem! but im worried the colas may mold! but i know mold dont like cold weather, temp is 58 and humidity is 60 what do ya think? Got a small fan exhausting out haveing a fan in there or blowing in makes the outside crispy i want it more even and slow dry.
i also had some i hung in the room with the carbon filter on it dried to fast i bagged it with the leaf on, will this make it tast and smell like shake. well the herb i get from the dispensery has the leaf on still and its stuck to the bud. but it is green crack its always consistent for years its soft and moist yet so smooth maybe there is so much resin it dont need a cure or they use a humidor
