I heard that the drying and curing is a make it or break it. What should I do?

Just let them keep growing. The one with more white hairs likely just has the "fox tail" gene. No big deal the buds will just be ugly but quality should still be good. As far as drying and curing.... Yes they are very important. Research it.

To get the best quality out of both of them, you will have to cut them at different times.
