Well I'm not too sure if it has a taste but I assume so since while drying/curing the chlorophyll is being broken down (or used up) which then gives you that nice weedy smell/taste. I haven't been to my harvest just yet but that's what I've learned.
It's been too long since biology class ( as a matter of fact this should be common sense ) but I believe chlorophyll is what gives the plant its green color. I think the chloroplast is where the chlorophyll is being produced.
