get a 30x powered light microscope and analyze the trichomes on the buds and leaved. at about 6 weeks into flowering begin looking at the plants, at this time they should be a clear, cyrstal color. about twice a week inspect the chomes again to check progress. The peak time for harvest is when the chomes are completely milky white and nearing an amber color (if they are strictly amber then peak time has passed) on the buds. At this same time the chomes on the leaves will probably be a little amber because the THC flows through them more easily. Again, when looking through a 30x microscope, the time that the chomes are completely milky white is the peak harvest time.
