Help with 2010 outdoor newbie grow

alright im planning on growing outside in marshes. i have 1 great sized marsh and one small but both secluded.

one has an old fashioned rusted windmill that was used to pump water, but was cut off. the great thing is the square bricks that hold it over the ground go down.

in here im going to grow at least 4.

everywhere else i have set up. but i need some help on soil

right now im going to use

2/4-horse manure compost
1/4-vermiculite
1/4-peat moss

is this a good beginner soil mix? im hoping that the snow when warmed will drop off alot of the PH level thats needed in to the compost.
can anyone tell me if theres a flaw in my plan?

if it were me i would go

1/5 soil (potting or top soil from the forest)
1/5 vermiculite
1/5 peat
2/5 horse manure.

But everyone is telling me that horse manure is poor, and to go with cow, chicken, or rabbit shit.
